De Harmonie’s philosophy is that every season has its own different ingredients, ingredients that Head Chef Marco Somer and his team grow themselves and use to ensure the very best taste. This creates a great respect for the ingredients which you can taste in every dish. Somer also likes forgotten recipes such as the traditional Dutch balkenbrij the way his grandmother made and forgotten ingredients like Crapaudine beet and sorrel.
